    Grilled Jalapeno Chicken Breast

    1-1/2 tsp Garlic powder
    Jalapeno pepper slices, optional
    1-1/2 Tbsp Jalapeno pepper, seeded & minced
    1/2 cup Lime juice
    Lime wedges, optional
    1/8 tsp Pepper
    1/4 tsp Salt
    6 ea Skinned, boneless cicken breast halves (6oz. each)
    Vegetable cooking spray
    1 Tbsp Vegetable oil

    Add the minced jalapeno pepper, lime juice, garlic powder, and vegetable oil to a large zip-lock plastic bag. Add the chicken, seal the bag, and turn to cover. Marinate in the refrigerator for 1 hour, turning at least 4 times. Remove the chicken, reserving the marinade. Sprinkle the chicken with salt and pepper.

    Spray the grill rack with the vegetable cooking spray and place the rack on medium-hot coals (350 to 400 degrees). Place the chicken on the grill, cover, and cook approximately 4 minutes on each side or until the chicken is done, basting often with the marinade. Transfer the chicken to a serving platter and garnish with lime wedges and/or jalapeno slices, if desired.
