    1/2 cup plain dry breadcrumbs
    4 tbsp. sesame seeds, toasted
    1 1/2 tsp. salt
    3/4 tsp. ground cumin
    3/4 tsp ground ginger
    3 1/2 lbs. skinless chicken pieces
    1/8 tsp. pepper
    1/2 cp all purpose flour
    2 eggs, lightly beaten
    1/4 cup low fat mayonnaise
    14 cup reduced fat sour cream
    1 small scallion, chopped
    1 tbsp. toasted sesame oil
    1 tsp. soy sauce

    Recipe



    Preheat oven to 400 degrees. Coat jellyroll pan with cooking spray.

    Combine breadcrumbs, 2 tbsp seeds, 1/2 tsp salt, cumin and ginger. Spinkle chicken with pepper and remaining salt.

    Coat chicken with flour, shaking off excess. Dip in egg, coat with breadcrumb mixture. Place on pan. Coat chicken with cooking spray. Bake until no longer pink near bone, 35-45 minutes. Cool, refrigerate until ready to serve.

    Combine remaining ingredients with remaining sesame seeds. Serve with the chicken.
