3 lbs. sweet and sour cut pork ribs, cut into 1 bone portions
water to cover
3 tbsp. hoisin sauce
2 tbsp. apple cider vinegar
2 tbsp. brown sugar, packed
2 tbsp. water
1 garlic clove, minced, or 1/4 tsp. garlic powder
2 tsp. salt
1/3 cup all purpose flour
4 large eggs
cooking oil for deepfrying
Recipe
Boil ribs in first amount of water in large pot or dutch oven for 20 minutes. Drain. Cool. Blot dry.
Combine next 6 ingredients in large bowl. Stir.
Add flour, Mix. Add eggs, one at a time, stirring well with whisk after each addition, until batter is smooth. Add ribs. Stir until coated.
Deep fry in 2 or 3 batches, in hot (375 degree) cooking oil for about 2 minutes, stirring often, until browned. Remove to paper towels to drain. Makes about 100 ribs.
