Select a large white onion. Remove skin. Trim top. With a sharp knife, make a cut in onion from top to bottom, as if cutting onion in half, stopping about ½ " from root. Make a second cut as if quartering onion, still not cutting through to root.
Continue cutting, to eighths, sixteenths, etc., making as many cuts as you can without damaging the flower.
Place onion in a mixture of: 1oz vinegar, 8oz ice water and several drops of food coloring (We chose green.). Refrigerate onion overnight. At intervals gently pry petals apart and return to cooler.
