A good way of preserving herbs that won't last in the refrigerator, like extra basil or cilantro, is to finely chop them and freeze with a small amount of water (just enough to hold it together) in ice cube trays. You can then pop the herbsicles out of the tray and store in a plastic food storage bag. When you need to add an herbal zip to soups, sauces or other recipes, just toss in a cube.
