Stuck with a Ton of Tomatoes

Recipe Introduction
I was stuck with an overwhelming amount of tomatoes one year, and wasn't too sure what to do with them, because I didn't feel like canning them. Here is what I did.
List of Ingredients
24-30 (or any amount) of ripe ready fresh tomatoes, chopped chunky
2-3 medium onions, chopped chunky
2 tbsp. Italian Seasoning
1 tbsp. orgegano (fresh or dried)
salt and pepper, to taste
1 tbsp. garlic powder
4 stalks of celery, diced
1 green or red pepper, chopped
1 can of mushrooms, (optional) I threw them in because I had them
Recipe
Saute onions in olive oil in a large sauce pan over medium heat, until tender crisp. Add Celery and peppers and continue sauting until tender crisp. Add tomatoes and rest of ingredients and continue on medium heat until you see juice from tomatoes. Continue on medium heat, until the juice reduces a little and simmer for an hour or so. Take off heat and cool completely. I ladel mine into containers or ziploc bags, and freeze. When needed remove from freezer and throw into soups, stews or sauces. Wonderful flavor.
