    Pineapple/Carrot Marmalade

    4 lbs. carrots, peeled
    3 lemons
    1 (1 lb. 4 oz.) can crushed pineapple
    4 c. sugar
    1 c. orange juice

    Recipe


    Put carrots & seeded but unpeeled lemon thru food chopper. Add remaining ingredients, cook until clear, stirring occasionally. Pour into hot jars. Adjust lids at once & process in boiling water bath (212 F.) 5 mins. Remove from canner & complete seals unless closures are self sealing type.
    Makes 4 1/2 pts.
