Cherry Banana Bread

1 jar (10 ounces) maraschino cherries
1 3/4 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup butter or margarine, softened
2/3 cup firmly packed brown sugar
2 eggs
1 cup mashed, ripe bananas
1/2 cup macadamia nuts, chopped
1 tablespoon brown sugar
Recipe
Preheat oven to 350 degrees. Drain maraschino cherries reserving juice. Cut cherries in quarters and set aside. In mixer bowl combine butter, 2/3 cup brown sugar, eggs, and 2 tablespoons cherry juice. Mix on medium speed until thoroughly combined. Add flour, salt, baking powder and baking soda alternately with banana, beginning and ending with dry ingredients. Stir in cherries and nuts. Lightly spray a loaf pan with cooking spray or vegetable oil. Spread batter evenly in pan. Sprinkle with 1 tablespoon brown sugar. Bake about 1 hour or until golden brown and wooden pick inserted in center comes out clean. Remove from pan and cool on wire rack. (When I try this with the glaze, I'm not going to top with the brown sugar)
