1 1/2 cups ROBIN HOOD® All Purpose Flour 375 mL
1/2 cup sugar 125 mL
1 tsp baking powder 5 mL
1 tsp baking soda 5 mL
1/2 tsp salt 2 mL
1 egg 1
1/2 cup margarine, melted 125 mL
1 1/2 cups bananas, mashed 375 mL
1 pkg (300 g) peanut butter chips, divided 1 pkg
Recipe
COMBINE first 5 dry ingredients in large bowl. Beat egg, melted margarine and mashed bananas together thoroughly.
ADD banana mixture to dry ingredients, stirring just until moistened. Stir in 1 1/4 cups (300 mL) peanut butter chips. Fill muffin cups sprayed with a non-stick spray.
Sprinkle remaining peanut butter chips on top.
BAKE at 375°F (190°C) for 20-25 minutes, or until tops are firm to touch.
