Pineapple Carrot Muffins

1 cup sugar
2/3 cup oil
2 eggs
1 1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 tsp vanilla
1 cup grated carrots
1 cup crushed pineappleRecipe
Mix in order given and bake at 350 degrees for 20-25 minutes. Can use paper muffin cups, and you can double the recipe and use a whole 19 ounch can of crushed pineapple.
