Pumpkin Harvest Muffins

Recipe Introduction
Note: Add 1 1/2 tsp. grated orange rind for Orange Pumpkin Muffins.
List of Ingredients
1 1/2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup raisins (optional)
1 egg
1/4 cup sugar
1/3 cup oil
1 cup canned/frozen pumpkinRecipe
Combine dry ingredients in large bowl. Stir well. Make a well in center. Beat egg until frothy. Mix in sugar, oil and pumpkin. Pour into well. Stir only til moist. Batter may be lumpy. Fill muffin cups 3/4 full. Bake at 400 degrees for 20-25 minutes. Let stand 5 minutes. Makes 14 muffins.
