    1 1/2 cups flour
    1/2 cup crushed graham crackers (about 3 cracker sheets)
    1/4 cup packed brown sugar
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 egg
    1 1/2 cups buttermilk
    1/4 cup vegetable oil
    3/4 cup semisweet choc. chips
    1 1/4 cups mini marshmallows, divided

    Grease 12 muffin cups; set aside. In a large bowl, combine the dry ingredients. In a medium bowl, combine the egg, buttermilk and oil; mix well. Stir into dry ingredients just until moistened. (The batter will be very thin.) Stir in chocolate chips and 1 cup of the marshmallows. Fill muffin cups 3/4 full making sure that there is plenty of chocolate chips in each cup. Sprinkle with remaining marshmallows. Bake at 375 degrees for 18-20 minutes. (The muffins will get brown on top.) Cool for 5 minutes before removing them to a wire rack. Serve warm.
