Zucchini-Cheddar Muffins

1 cup chopped onions
1/4 cup margarine
Cook in microwave until tender.
2 1/2 cups Bisquick
1 Tbsp snipped parsley
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 cup milk
3 eggs, beaten
1 1/2 cups shredded zucchini
1 cup grated cheddar
3/4 cup chopped or sliced almondsRecipe
Heat oven to 400°.
Reserve almonds. Mix rest of ingredients and spoon into mini muffin tins that have been coated with vegetable spray. Sprinkle nuts on top. Bake 20 minutes or until browned. Makes 4 dozen
