Zucchini Muffins

2 c. sugar
2 c. shredded zucchini
1 c. oil
3 eggs
1 tsp. vanilla
1 tsp. baking powder
3 c. plain flour
1 c. nuts
(may use raisins if desired)

Recipe



Mix flour, sugar, baking powder, vanilla, eggs, and oil. Stir in zucchini and nuts. Pour in muffin tins and bake @ 350° until brown.
