List of Ingredients
1 small green pepper chopped
1 medium onion, chopped
3 cloves of garlic, minced
1 small can of mushrooms
Saute in a pan with cooking spray.
Add:
1 15 oz can stewed tomatoes, breaking up as you stir
1 8 oz can tomato sauce
1 tsp Italian seasoning
salt and pepper to taste
Simmer on med-low.
Add:
5 cups fresh baby spinach
2 Tbs toasted pine nuts
2 Tbs low fat parmesan cheeseRecipe
While you are making the sauce, cook 8 oz penne pasta, drain and toss in the sauce. Stir in the spinach until it wilts. I toasted my pine nuts in the broiler really quick. It was so yummy!
