    This is for the busy mom. Much less mess and fuss, and tastes just as good.

    List of Ingredients




    3 cups cooked pasta, I use rotini or penne
    1 lb. extra lean ground beef
    1 jar pasta sauce
    1 onion, diced finely
    1 small green pepper (optional)
    1/4 tsp. minced garlic
    1/4 cup parmesan cheese
    1-2 cups sourcream or cottage cheese
    1 egg
    1-2 cups mozza or marble cheddar cheese

    Preheat oven to 350 degrees, and prepare a casserole or small roaster with vegetable spray.

    Cook pasta until el dente'.

    Brown ground beef, until no pink remains, over medium high heat. Drain off any excess fat. Add in onions, pepper, garlic and scramble fry until veggies are turning translucent and tender. Add in your jar of pasta sauce and parmesan, and mix in well. Turn heat down to low and let simmer until flavors meld nicely.

    Meanwhile, grate cheese and mix the cottage cheese well with the egg.

    In the bottom of the prepared casserole, put a little of the sauce to just cover the pan. Place in half of your cooked noodles. Pour overtop that the meat sauce. Then the cottage cheese mixture. Lay on the rest of the noodles. And top with the cheddar cheese.

    Put in the prepared oven for about 45-1 hour at 350 degrees. Let sit about 10 minutes after coming out of the oven before serving. Serve with garlic bread and/or a garden salad.
