1 pound (450 g) ground beef
1/2 cup (120 ml) chopped green pepper
1/2 cup (120 ml) chopped onion
2/3 cup (160 ml) water
1 envelope (1-1/4 oz/35 g) taco seasoning
1 can (15 oz/420 g) black beans, rinsed and drained
1 can (14-1/2 oz/406 g) Mexican diced tomatoes, undrained
6 flour tortillas (8 inches/20 cm)
1 can (16 oz/448 g) refried beans
3 cups (720 ml) shredded Mexican cheese blend (12 oz/336 g)Recipe
In a large skillet, cook the beef, green pepper and onion over
medium heat until meat is no longer pink; drain. Add water and
taco seasoning; bring to a boil. Reduce heat; simmer, uncovered,
for 2 minutes. Stir in the black beans and tomatoes. Simmer,
uncovered, for 10 minutes.
Place two tortillas (*) in a greased 13x9-inch (33x23-cm) baking
dish. Spread with half of the refried beans and half of the beef
mixture; sprinkle with 1 cup (240 ml) cheese. Repeat layers. Top
with remaining tortillas and cheese. Cover and bake at 350 F (180
C) for 25-30 minutes or until heated through and cheese is melted.
Makes 9 servings.
(*) If you cut the tortillas in half, and lay each half with with the
straight edge along each of the 4 sides of the baking dish, that will
give you the best coverage without piecing little bits together.
