    1/2 cup rice
    16 oz milk
    1/8 tsp salt
    1 tsp sugar
    1 tbs butter
    grated rind of 1/2 of a lemon
    1 tbs rum (optional)
    1/2 cup flour
    3 eggs, separated
    oil for frying

    Recipe



    Cook rice in milk in double boiler about 20 minutes. Add salt, sugar, butter, and lemon rind. Allow mixture to cool and add rum, flour, and beaten egg yolks. Let stand in cool place several hours. When ready to serve, fold in stiffly beaten egg whites and drop by spoonfuls into hot vegetable oil. Cook, turning once, until golden brown. Sprinkle with powdered sugar.

    Serves 4.
