Cream of Potato Soup

List of Ingredients
4 slices bacon, cut up
2 medium potatoes, cubed (3 cups)
1 large onion, chopped (1 cup)
1 medium carrot, chopped (1/2 cup)
1 stalk celery, chopped (1/2 cup)
4 cups milk
2 tsp. salt
1/4 tsp pepper
1 c. sour cream
2 tbsp. flour
dash paprikaRecipe
Cook bacon until crisp. Drain, reserve 3 tbsp drippings in pan. Set bacon aside. Add potatoes, onion, carrot and celery to drippings. Cover and cook over low heat for 20 minutes or until veretables are tender, stirring occasionally. Stir in milk, salt and pepper, bring to a boil.
Stir together sour cream, flour and paprika. Gradually stir about 1 cup of hot mixture into flour mixture. Return to cooking pot. Cook and stir just until mixture bubbles. Add bacon and serve.
For a diffrent flavor, add some cauliflower.
