    Richard's Homemade Chicken Noodle Soup

    Recipe Introduction

    I remember being at home and coming home from school, to a big huge pot of this soup, on a cold day. To this day it is my favorite, and I make it for my family too. In this recipe you can substitute the chicken with Beef soup bones.

    List of Ingredients

    Soup:

    A whole chicken
    4 large carrots cut up
    3 stalks of celery
    1 large onion, sliced
    2 tsp. pickling salt, either loose or put in a tea strainer
    water to cover chicken well


    Noodles:

    4-6 eggs, depending on how many noodles you like.
    3 tbsp. milk
    salt and pepper
    flour to make a soft dough, shouldn't be really sticky, just so you can roll it out on the noodle machine with out sticking
    extra flour to have on hand while working with the dough

    Recipe

    Soup: Add all the soup ingredients to a large pot, and bring to a rapid boil, turn down to medium heat and continue for about a half hour. Simmer for about another hour, until all vegies are tender. Remove the chicken and either remove the chicken meat from the bones, or save the boiled chicken for my "Creamed chicken" recipe. Continue simmering the broth, while you make noodles.

    Noodles: Add eggs to medium sized bowl, and beat them a little. Add the milk and salt and pepper. Add the flour to the egg mixture and work with hands. Remove from the bowl and knead appropriately on the counter, and using your extra flour if needed.

    Get your noodle machine set up. Cut the dough into small pieces accordingly, and run through the flattener on your noodle machine(about #4)After running all the pieces of dough through. Run them through on a flatter size. (of course depending on how thick you want your noodles.) Remember you have to make sure all the dough peices are appropriately covered in flour so it doesn't stick. Now, you can run through the noodle cutter part of the noodle machine. Shake off excess flour, and have a pot of boiling water with oil in it, to boil the noodles. After boiling noodles (they must float) remove them from boiling water with a slotted spoon, and rinse well with water to get off starch. Put directly into soup broth. This will be an assembly line style of working. So make sure you have everything ready to run smoothly.

    Note: You can also add frozen peas and 1/4 c. of green onions, chopped to the broth before you add the noodles. After noodles are all in the pot, just simmer a few more minutes, and serve.

    Note: If you don't have a noodle machine you can also make noodles, by flattening out the dough, and just cutting with a sharp knife, but a noodle machine is soooooo much easier.
