    Tortellini Tomato Soup

    List of Ingredients

    2 tablespoons Olive oil
    1 cup chopped onion
    3 finely chopped garlic cloves
    2, 14.5 ounce cans diced tomatoes, undrained
    2, 14.5 ounce cans chicken broth
    1, 6 ounce can tomato paste
    1 cup sliced carrot
    1 tablespoon dried parsley, or 3 tablespoons freshly chopped
    2 teaspoons dried crushed basil
    2 teaspoons dried crushed oregano
    1/4 teaspoon ground black pepper
    1, 9 ounce package uncooked refrigerated cheese tortellini,
    ...or frozen, thawed)
    1 cup sliced zucchini, optional
    1/2 cup freshly grated Parmesan cheese

    Recipe

    Heat the oil in a large saucepan over a medium/high heat. Add the onion and garlic. Saute for 2 - 3 minutes. Stir in the tomatoes, chicken broth, tomato paste, carrots, parsley, basil, oregano and pepper. Cover and bring to a boil. Reduce heat and simmer for 20 minutes, stirring occasionally. Stir in the tortellini and zucchini. Continue to cook for 6 - 7 minutes or until the tortellini are tender. Stir in the cheese just before serving.
    Makes 6 - 8 servings.
