Individual Stuffed Pumpkins

8 baby Pumpkins
1/3 C. Chicken stock
1/2 C. finely chopped Onion
3 minced Garlic cloves
1/2 tsp. dried Sage
1/2 tsp. Thyme
1 C. Bread crumbs
1/4 C. toasted Pine nuts
1/4 C. dried Apricots, chopped
1/3 C. Finely chopped Celery
Soy sauce to tasteRecipe
Slice off the top 1/2 " of each pumpkin & scoop out the seeds. Bake
pumpkins for 15 min. Heat stock to simmering. Add onions & cook until
softened but not browned. Add garlic, sage, thyme & bread crumbs. Cook,
stirring, 1 minute, then remove from heat and stir in remaining
ingredients. Lightly fill pumpkins with stuffing. Any remaining stuffing
may be baked separately in a lightly oiled baking dish. Bake at 350 for
15 min. until stuffing is lightly browned & heated through. Be careful
not to over bake the pumpkins because they will split.
