3 medium zucchini, halved, hallowed, pulp reserved
1 pkg. minute rice creations, Florentine Rice
1 cup Cheddar cheese grated and divided
Recipe
Heat oven to 400 degrees. Cook zucchini in boiling water until tender, drain. Preapare rice as directed on package. Stir in zucchini pulp and half the cheese.
Spoon 1/2 cup filling into each zucchini half. Sprinke with reamining cheese. Place in greased 8 inch dish. Bake 20 minutes. Makes 6 servings.
