    Best Buttermilk Pancakes

    1 egg
    1 cup all-purpose flour
    OR
    1 cup whole wheat flour
    1 cup buttermilk
    1 tablespoon granulated sugar
    OR
    1 tablespoon packed brown sugar
    2 tablespoons vegetable oil
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt

    Recipe




    Beat egg in medium bowl with hand beater until fluffy. Beat in remaining ingredients just until smooth. (For thinner pancakes, stir in 1 to 2 tablespoons milk.)
    Heat griddle or skillet over medium heat or to 375º. Grease heated griddle, if necessary. To test griddle, sprinkle with a few drops of water. If
    bubbles jump around, heat is just right.
    For each pancake, pour slightly less than 1/4 cup batter from cup or pitcher onto hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other sides until golden brown.
    Yield:
    "9 4-inch pancakes"

    Serving Ideas : Drizzle these tender, golden pancakes with rich chocolate sauce, pile on the fresh juicy red raspberries and top them off with a dusting of powdered sugar.
