Coconut French Toast

12 eggs
1-1/4 cups milk
2 tsp. sugar (I use sweet-n-low)
1 tsp. cinnamon
14 slices bread, day old
1 (7oz) pkg. flaked coconut
maple syrup
Recipe
Beat the eggs and milk together, add the sugar and cinnamon and mix well.
Add the bread a few slices at a time and let them soak for at least a
minute on each side. Coat both sides with coconut. Place on a greased
baking sheet. Bake in a 475 degree oven for 5 minutes on each side or
until golden and cooked through. Serve with syrup.
