1 cup sifted flour
1 teaspoon baking soda
4 eggs, 3 with the yolks separated from the whites, and the whites stiffly beaten
2 tablespoons sugar
½ teaspoon salt
1 cup light cream
1 tablespoon lemon juiceRecipe
With an electric mixer on high speed, beat one whole egg and three egg yolks with the sugar and salt until they form a heavy ribbon when the beater is lifted from the bowl – about 10 minutes. Keep the mixture on high speed and add the cream, mixed with the lemon juice. Blend in the flour, mixed with the baking soda. Whip the egg whites and fold them into the batter.
Cook promptly.
Makes twelve 4-inch pancakes
