    "The BEST" Baking Powder Biscuits EVER

    This is a basic recipe that my mom uses all the time but I prefer the variations.

    List of Ingredients




    2 c all-purpose flour
    2 t baking powder
    1 t salt
    1 t sugar
    1 t cream of tartar
    5 T cold butter, cut into small pieces
    3/4 c milk

    Recipe



    DIRECTIONS:

    Preheat the oven to 450 degrees F. Sift the flour, baking powder, sugar, cream of tartar and salt together into a bowl. Cut in the butter using a pastry blender or 3 knives until the mixture resembles coarse meal. Add the milk. Gather the dough into a ball and knead on a lightly floured board for a few seconds. (Work the dough as little as possible in order to have the lightest biscuits.) Pat or roll out the dough into a circle 1/2" thick, and cut out as many biscuits as possible, using a glass or a biscuit cutter. Gather the scraps together and roll out again to form the remaining biscuits. Place the biscuits on a baking sheet and bake until golden, about 12 minutes. Serve hot and with plenty of butter, honey and preserves.

    THIS makes 12 biscuits.

    VARIATIONS: 1) For cheese biscuits, fold 3/4 c of grated cheddar cheese into the biscuit dough. 2) For sesame seed biscuits, fold 1/2 c toasted seasame seeds into the biscuit dought. After baking, sprinkle the surface of the biscuits with a combination of 1/4 c of toasted sesame seeds and 1/4 c of coarse salt. 3) For bacon biscuits, substitute 3 T bacon fat for 3 T of the butter and fold 1/4 pound bacon, crisp fried and crumbled, into the biscuit dough
