    Easy Mushroom Brunch Bake

    Here's the mushroom recipe--it won the Grand Prize at the 1998 Mushroom Festival Cook-Off and was also prepared on Cook-Off America

    List of Ingredients

    Easy Mushroom Brunch Bake

    6 slices white bread, crusts removed, cubed
    8 ounces breakfast sausage, cooked and crumbled
    (or use bacon, if preferred)
    1/4 cup sliced onion
    3 cups sliced white mushrooms (or use your favorites)
    6 eggs
    1 cup Bisquick
    2 cups milk
    2 tablespoons Hellmann's Dijonnaise (or 1 tablespoon Dijon)
    2 tablespoons fresh, snipped parsley
    1/2 teaspoon dried sage, or 2 teaspoons fresh, snipped
    1 1/2 cups grated cheddar

    Recipe

    Preheat oven to 350 degrees. Grease a 9" square glass pan and add bread cubes. Mix the sausage, onion and mushrooms and add to the casserole. Whisk the remaining ingredients together to mix and pour over the ingredients in the pan. Bake 45-50 minutes or until puffed and golden. Let sit 5 minutes, then cut into squares to serve.

    Looks nice on a plate with some cherry or grape tomatoes and some diced orange peppers. Enjoy.

    If you like, casserole can be put together the night before, covered and refrigerated, then baked in the morning. Might take an extra 10 minutes or so if it's ice cold.

    Serves 6
