This is a tasty souffle to try - my family likes chicken so this is a favorite.
List of Ingredients
Chicken Souffle
Serves 4
Fine cracker crumbs
1/4 cup butter or margarine
1/4 cup flour
1 cup finely ground cooked chicken
6 egg yolks, lightly beaten
Freshly ground black pepper
6 stiffly beaten egg whites
1/2 recipe Creamy Mushroom Sauce (See below)
Creamy Mushroom Sauce:
1 (10 1/2 oz.) can condensed cream of mushroom soup\1 cup sour cream
1/4 cup milk
1/4 cup chopped pimentoRecipe
Preheat oven to 375° F. Grease an 8 x 8 x 2-inch baking dish; sprinkle bottom and sides with crumbs. In a medium saucepan melt butter or margarine. Add flour. Cook and stir over medium heat for 1 to 2 minutes. Add milk. Stirring, bring to a boil and boil until thickened.
Remove pan from heat and stir in chicken, egg yolks, salt and pepper to taste. Fold in egg whites. Spoon into baking dish. Bake for 35 minutes or until top is a golden puff.
Serve sauce separately.
Creamy Mushroom Sauce DIRECTIONS:
In a small saucepan mix soup, sour cream and milk until smooth. Stir over low heat until heated through. Stir in pimento.
