    Recipe Introduction

    This Fort Dodge recipe won the championship. Recipe posted in recipe book by Peter Slagenweit of Fort Dodge. Excellent recipe that I suggest you try, particularly if you like spicy chili.

    List of Ingredients

    4-5 fresh, mild chili peppers
    2 large onions - diced
    2 medium carots - grated
    4 cloves garlic - crushed
    2 lbs lean pork roast
    2 lb lean beef roast
    2 qt diced tomatoes with juice
    1 c V-8 tomato juice
    1 T leaf Mexican oregano
    1 T dried cilantro
    2 T sweet basil
    2 bay leaves
    1 T ground cumin
    2 T chili powder
    1/8 t cayenne pepper
    1/8 t white pepper
    salt to taste

    Recipe

    Cut chili peppers in half. Remove seeds and dice. Into a 6-QT dutch oven place peppers, onions, garlic and V-8 juice; cook until translucent. Cut the pork and beef into 3/8 cubes; add to onion mixture. Cover and cook until done. Add tomatoes, oregano, cilantro, basis, bay leaves; cook for 30 minutes, then add cumin, chili powder, cayenne and white pepper, and salt to taste. Cook 30 minutes longer.

    Serves 6 to 8
