Funnel Cakes
Mix together:
2 cups milk
2 beaten eggs
Sift together:
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
Pour milk mixture into flour mixture; mix thoroughly. Test mixture to see if it flows thru a funnel. If too thick, add milk; if too thin, add alittle more flour.
Heat deep fat in a heavy iron skillet, pour batter thru funnel into deep hot fat, into spirals or other shapes, using your finger to control batter. Fry until lightly browned and puffed; drain on paper towels and sprinkle with powdered sugar or cinnamon sugar while still hot. Best if eaten immediately.
