    Moist Cherry Bread

    3 cups all-purpose flour
    4 teaspoons baking powder
    3/4 cup sugar
    1 teaspoon salt
    1 cup chopped walnuts
    2/3 cup chopped Maraschino cherries
    1 egg
    1 cup applesauce
    1/2 cup milk, plus 2 tablespoons
    1/4 cup oil

    Sift together flour, baking powder, sugar and salt. Stir in walnuts and chopped cherries. Beat egg with a fork in medium size bowl; stir in applesauce, milk and oil. Add all at once to dry ingredients. Stir until evenly moistened (Do not use mixer!). Pour into a greased 9x5x3-inch loaf pan, leveling the top.
    Bake at 350° for 1 hour and 10 minutes. Cool in pan 10 minutes; turn out onto wire rack to finish cooling.

    Makes 1 loaf
