Mock Apple (Zucchini) Pie
4 cups zucchini, peeled, seeded and sliced 1/4-inch thick
5 tablespoons lemon juice
Combine together; this keeps it firm and moist.
Mix together:
1/2 cup sugar
2 tablespoons tapioca
2 teaspoons ground cinnamon
2 teaspoons cornstarch
Add to zucchini-lemon juice mixture. Place in a pie shell, in a casserole.
Topping:
1/2 cup flour
1/2 cup oleo
1/2 cup brown sugar
Sprinkle over the top with a dash of cinnamon. (You can add 1-2 apples, sliced if desired. Bake at 375° F. for about 1 hour.
Makes one 10-inch pie
