Orange Zucchini Cake
1 cup flour
1 teaspoon baking powder
1/2 teaspoon soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 cup sugar
1/2 cup oil
2 large eggs
1/2 cup All-Bran cereal
1-1/2 teaspoons grated orange rind
1 teaspoon vanilla
1 cup peeled and grated zucchini
1/2 cup chopped nuts
Frosting:
1 (3-ounce) package cream cheese, softened
1 tablespoon margarine, softened
1/2 teaspoon grated orange rind
1-1/2 cups sifted confectioners' sugar
Combine first 6 ingredients; set aside. In a large bowl, stir sugar, oil, and eggs until blended well. Stir in cereal, grated orange rind and vanilla. Add the flour mixture, zucchini and nuts. Mix well. Spread in greased 10x6x2-inch baking pan. Bake at 325° for 35 minutes. Cool and frost.
Frosting: Combine cream cheese and margarine, beating until fluffy. Add orange peel and confectioners' sugar and blend in well. Spread on cooled cake.
