Zucchini, Nut, Raisin and Maraschino Cherry Cake
3 cups peeled and grated zucchini, drained
3 cups sugar
1 cup oil
4 eggs
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
1 cup chopped nuts
1 cup plumped raisins, drained and cooled
1 cup Maraschino cherries, cut in half; drained
Combine zucchini, sugar, oil and eggs together in a large bowl. Mix dry ingredients together and combine with the fruit and nuts. Add dry ingredients to wet ingredients; mixing well. Add vanilla, mixing well. Pour into 3 greased and floured 9x5x3-inch loaf pans. Bake at 300° F. for 1-1/2 hours or until tests done.
Makes 3 loaves
Note: Batter will be thin.
