Greek Orange Nut Cookies
Honey Syrup:
1/2 cup sugar
1/2 cup water
1/4 teaspoon ground cinnamon
1 3-inch strip of orange peel (not too much white)
1/2 cup honey
Dough:
1-1/2 cups flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
Pinch salt
Grated rind of 1 orange
1 cup butter or margarine
1 cup sugar
4 eggs
1/3 cup orange juice
2 cups finely chopped walnuts

For Honey Syrup: With a sharp knife, pare a 3-inch strip of orange peel from the orange. Try not to get too much white part. Combine in saucepan with 1/2 cup sugar, water and ground cinnamon; bring to a boil. Simmer 25 minutes; remove from heat and remove orange rind. Stir in the honey and let cool.
Preheat oven to 350° F. and grease a 15x10x1-inch pan.
Sift together flour, baking powder, cinnamon and salt; mix in grated orange rind and set aside. In a large mixer bowl, beat together butter or margarine, sugar and beat in eggs, one at a time, until mixture is light.
Beat in dry ingredients, alternately with 1/3 cup orange juice until batter is smooth. Blend in 2 cups finely chopped walnuts. Spread in prepared pan. Bake 18-20 minutes; should spring back when touched. Place pan on a rack.
Gradually spoon honey syrup evenly over cake, letting syrup soak in. Cut in diamonds or squares. Add halved or whole walnut pieces on top of each one.
Let cool. These keep well.
