    Raisin-Filled Cookies

    Source of Recipe

Partyline - 7/5/82 - Karen from Brookfield. OH

    List of Ingredients

    2 scant cups sugar (1/2 white - 1/2 brown)
    3/4 cup shortening
    1/2 teaspoon salt
    2 eggs
    1 teaspoon vanilla
1 teaspoon baking soda, dissolved in 1 teaspoon vinegar
    1 cup milk
    3 teaspoons baking powder
    Flour (no amount given)
    Filling:
1 pound raisins, ground in food processor
    1 cup sugar
    1 cup water
    2 tablespoons flour
    1 teaspoon vanilla
    1 egg, beaten (for glazing)

    Recipe

Cream together the first 5 ingredients until creamy. Add baking soda, milk, baking powder and enough flour to make a manageable dough. Refrigerate overnight.

For Filling: Grind raisins up in a food chopper or food processor. Cook with sugar and water over low heat for 5 minutes. Add the flour and stir. Continue cooking until thickened. Add vanilla and let cool.

Roll dough 1/4-inch thick. Using a round cookie cutter, dipped in sugar to cut out rounds of dough. Make them small as they double in size during baking. Place 1 tablespoon of filling in center of dough rounds. Cover with another round of dough. Press or crimp edges to seal in juices.

Brush with beaten egg before baking. Bake at 350 F. for 10 minutes or until done, on greased cookie sheets.
