    Thimble Cookies

    1/2 cup butter
    1/2 cup light brown sugar
    1 egg
    1-1/2 cups flour
    Dash of salt
    Egg white
    1 cup chopped nuts
    Jelly or jam (your choice)

    Beat butter, brown sugar and egg until creamy. Beat in flour and salt. Flour hands and roll into 1-inch balls; dip balls in beaten egg white and then into chopped nuts. Place on greased cookie sheet 2-inches apart. With a thimble or your thumb, make an indentation in tops of cookies. Bake at 350° for 10-12 minutes. Cool and fill centers with your favorite jelly or jam.
