Canned Barbecue Sauce
15 firm ripe tomatoes
1 large onion
1 green bell pepper
4 cloves garlic, minced or pressed
2 cups water
1/2 cup cider vinegar
1/2 teaspoon Worcestershire sauce
1/2 cup brown sugar, packed
2 tablespoons salt (this is correct!)
4 teaspoons dry mustard
4 teaspoons chili powder
1/2 teaspoon celery seed
1/2 teaspoon hot pepper sauce
In food chopper or processor, finely chop tomatoes, onion and green pepper and put in a large kettle. Add the garlic and remaining ingredients; bring to a boil, lower heat and simmer, stirring often for 1 hour until thickness is desired. Ladle into 5 hot sterilized pint jars. Seal and store.
Makes 5 pints
Note: Boil Kerr lids in hot water bath 5-10 minutes to seal.
