Green Tomato Mincemeat II
7 large green tomatoes
7 large tart apples
2 cups raisins
1/2 cup mixed dried fruit, chopped
1/2 cup orange and lemon rind, chopped
1/2 cup cider or fruit juice
1 can sour cherries in juice
3 cups sugar
1-1/2 teaspoons salt
1 tablespoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground ginger
1 tablespoon molasses
1 cup lean ground beef, browned
Wash tomatoes, cut stems and ends and chop. Peel and core apples and chop. Cut up cherries and dried fruits, raisins and rinds. Cut with scissors into small pieces.
In a large kettle, put all ingredients in and bring to boiling point. Reduce heat and simmer 1 hour. Cook longer to resemble mincemeat thickness. Pour in sterilized jars and seal with hot lids.
Makes 5 pints (or enough for three 9-inch pies)
