Hot Peppers in Jars
1/2 bushel hot peppers ( can use half of regular and half hot peppers
1/2 gallon white vinegar
1-1/2 quarts water
1 pint oil
1-3/4 cups canning salt
2-3 cloves garlic per jar
Oregano
Keep quart jars hot, sterilized and ready. No cold packing.
Clean peppers and cut in strips in pan. Boil vinegar, water, oil and canning salt together; keep at a slow boil on stove. In bottom of hot jars, add the garlic cloves. Mix the peppers together and place in layers - oregano, peppers, oregano, layered to the neck. Add boiling solution on peppers and take a knife and poke around to release any air bubbles. Seal with hot jar lids.
