Old-Fashioned Corn Relish
This is a 50-year old recipe.
18 ears corn, cut off cob
2 large green bell peppers, seeded and chopped
2 large sweet red bell peppers, seeded and chopped
1 small head cabbage, chopped small
4 large onions, chopped
1 cup chopped celery
1 quart cider vinegar
2 cups light brown sugar
2 tablespoons salt
2 tablespoons dry mustard
Mix vegetables altogether; add remaining ingredients and cook until corn is tender, 20-30 minutes. Stir occasionally. Pack in hot jars and seal.
