Pickled Cauliflower
4 heads cauliflower, separated
1 cup canning salt
2 quarts white vinegar
2 cups sugar
1/4 cup mixed pickling spice
Separate cauliflowerets; add salt and let stand overnight. Place in colander; rinse with cold water and let drain. Tie spices in cheesecloth. Boil with vinegar and sugar. Drop in cauliflowerets; boil about 3 minutes.
Pour to overflowing in wide mouth jars. Wipe rims and seal with hot lids.
