Sliced Peppers in Oil
6 quarts sliced red, green and yellow bell peppers
1/2 cup salt
2 tablespoons oregano
4 cloves garlic
Vinegar
Oil
Place sliced peppers in a glass bowl. Mix in salt, oregano and garlic. Pour in enough vinegar to cover well. Let set overnight; drain well. Put in sterilized jars; fill with oil. Wipe jar rims off and jars. Seal with hot lids. Store in cool dry place.
