    Zucchini Pickles (Like Bread and Butter)

    2 pounds zucchini, sliced thin, unpeeled
    2 small onions, sliced thin
    1/4 cup pickling salt
    2 cups sugar
    1 teaspoon celery seed
    2 teaspoons mustard seed
    3 cups cider vinegar
    1/2 teaspoon turmeric

    Wash and cut zucchini and onions; cover with water and salt and let set for 2 hours. Drain well. Place remaining ingredients in a pan, bring to a boil. Pour over the zucchini; let stand for 2 more hours. Bring all to a boil for 5 minutes. Pour into hot sterilized jars, wipe rims and jars; seal.

    Makes 3 pints
