Ida's Easy Apple Strudel
2-1/2 cups all-purpose flour
1 teaspoon baking powder
2 eggs
1/2 cup water
2 tablespoons oil
1 tablespoon lemon juice
Cinnamon-sugar
2 large apples, peeled and grated
Graham cracker or vanilla wafer crumbs
Sift together flour and baking powder. Beat eggs in a bowl, with water, oil and lemon juice. Mix as for pie dough, adding flour mixture. Let rest 30 minutes, under warm bowl. Divide into 4 balls. Roll thin, one at a time, and brush with melted butter. Sprinkle cinnamon and sugar on upper third of dough. Spoon some grated apple over cinnamon-sugar. Sprinkle with graham or vanilla wafer crumbs to absorb apple juices. Roll up.
Place two to a baking sheet (greased); slit in 5 places or prick tops and bake at 400° F. for 20 minutes. Cool 20 minutes, then slice.
Makes 4 strudels
