    Peach Cobbler

    10 peaches, sliced
    2 cups sugar
    1 teaspoon lemon juice
    1 teaspoon grated lemon rind
    1/2 teaspoon almond extract
    1-1/2 cups flour
    3 tablespoons sugar
    3 teaspoons baking powder
    1/2 teaspoon salt
    1/3 cup shortening
    1 egg
    1/2 cup milk
    2 tablespoons sugar

    Mix the peaches, 2 cups sugar, lemon juice and rind and almond extract. Put in a 9x13-inch baking pan.
    Bake at 400° until peaches are tender. Meanwhile, mix the flour, 3 tablespoons sugar, baking powder, and salt. Cut in shortening. Beat the egg and milk; add to the crumb mixture. (It will be lumpy).
    Drop by teaspoonful on top of peach mixture. Sprinkle 2 tablespoons sugar on top of it and return to oven to brown.

    Serves 6
