Romi's Rolled Apple Dumplings
2 cups flour
1/2 teaspoon salt
2 tablespoons sugar
1 teaspoon baking soda
1 cup small curd cottage cheese
1/2 stick butter
2 tablespoons lemon juice
4 cups thinly sliced apples
Cinnamon
Water
Syrup:
2 cups water
3 tablespoons lemon juice
1 cup sugar
1/2 stick butter
1 teaspoon vanilla
Blend together flour, salt, 2 tbsp. sugar, and soda. Add cottage cheese, butter, and lemon juice. Cut in with a pastry blender. Form into ball of dough. On well-floured surface, roll out dough as thin as possible into an 18x18-inch rectangle.
Arrange the apples evenly over the dough, leaving margin around dough. Sprinkle lightly with cinnamon to taste. Roll up gently like a jelly roll, seal seam side and ends (moisten with water.) Cut into 16 slices (1-inch thick). Arrange in well buttered 9x13-inch baking pan.
Combine syrup ingredients in a saucepan and bring to a boil; boil 1 minute. Pour the syrup over apple rolls.
Bake at 350° F. about 30-35 minutes, or until browned. Let set a few minutes. (A nice pudding-like sauce forms on top).
Serves 4-6
