Romy's French Fried Ice Cream
Vanilla ice cream
Coating:
3 egg whites, unbeaten
1 small can almond paste
1-1/2 to 2 cups graham cracker crumbs
Scoop balls of ice cream; place on wax paper-lined cookie sheet or tray and freeze until solid. Roll each ball in egg whites and almond paste. Then roll in graham cracker crumbs. Return to freezer and freeze until solid.
Store in freezer. Take out as needed. Heat oil until very hot (not smoking). Use a fry basket, 2 balls at a time.
Cook quickly just until crust is brown, about 5 seconds.
