Ida's Fried Ice Cream
1 quart ice cream
Batter:
4 eggs
4 tablespoons flour
1/2 teaspoon baking powder
Crisco shortening for frying
Scoop out 6 balls (3-inchs in diameter) of ice cream. Place on a wax paper-lined cookie sheet and let freeze until solid again.
Batter: Beat the eggs; add the flour and baking powder and mix well. Take ice cream balls and dip them in the batter; freeze again (Do this 3 times), 1 hour apart. Dip again after 4th hour and fry in hot deep shortening for 4 minutes. Remove and serve.
